Fresh Tomato Sauce

Fresh Tomato Sauce

5.5-6lbs ripe tomatoes (larger ones are easier)
1.5 medium onions, chopped
1-2 tsp. minced garlic
2 bay leaves
1/4 cup sugar
6 T chopped fresh basil OR 3 tsp. dry
1 T + 1tsp. salt
6 tsp. dry oregano
1/4 tsp. cayenne pepper
26oz. Hunts tomato paste

Boil water in a large pot. Set out a large bowl of ice water. Drop tomatoes 3-4 at a time into boiling water. Boil for 2 min. or until skin splits. Then remove to ice water to cool. Remove to another bowl once cool.

When all are done, remove skins and cores. Cut tomatoes into quarters.

In a large pot, add 2-3 T olive oil and heat on medium. Saute onion and garlic until soft. Do not brown.

Add tomatoes, spices, and tomato paste. Bring to a simmer and cook, stirring frequently, for 2 hours.

Can add any kind of meat. Freezes well!

One Minute Easy Chocolate Frosting

Serves: 1 9x13 pan
Ingredients
  • ⅓ cup milk
  • ⅓ cup butter, softened
  • 1¼ cups sugar
  • 1 teaspoon vanilla
  • 1 cup semi-sweet chocolate chips
Instructions
  1. Combine butter, milk and sugar in a small saucepan.
  2. Bring to a boil over medium high heat and let boil for 45 seconds.
  3. Remove from heat and whisk in vanilla & chocolate chips until smooth and shiny.
  4. Immediately pour over a 9x13 cake or brownies.
  5. Let cool completely to set.

Beef and Broccoli (crock pot)

INGREDIENTS

Servings: 4
2 pounds sirloin steak or boneless beef chuck roast, sliced thin
1 cup beef broth
1/2 cup low-sodium soy sauce
1/4 cup brown sugar
1 tablespoon sesame oil
4 garlic cloves, minced
4 tablespoons cornstarch
4 tablespoons water
1 head of broccoli, cut into florets

For serving:

White rice, cooked

PREPARATION

In the insert of the crockpot, whisk together beef broth, soy sauce, brown sugar, sesame oil, and garlic.
Place slices of beef in the liquid and toss to coat. Cover with lid and cook on low heat for 4 hours.
After 4 hours, whisk together cornstarch and water in small bowl. Pour into crock pot and stir to mix well. Add the broccoli and gently stir to combine. Cover with lid and cook 30 minutes to cook broccoli and thicken sauce.
Serve over warm white rice. Enjoy!
