Meatloaf (egg free)

This recipe was a little too sweet for us, but I think it's because I used honey BBQ sauce instead of regular. I would make this again, but I'd switch out the sauce and I'd add a bit more crackers or oatmeal to firm it up. I'd also cook it a little longer.

Also, I used ground turkey - which was good.

Egg-free meatloaf

Chocolate Chip Pumpkin Cookies (egg free)

These are awesome! After 2 batches, I'm in love.
2 1/2  cups  whole wheat flour
1  tsp  cinnamon
1/2  tsp  baking soda
2 1/2  tsp  baking powder
1/4  tsp  salt
1  cup  sugar (could sub. 1/4 cup honey)
1/2  cup  butter
1/4  cup  pure maple syrup
1  tsp  vanilla
1  cup  pumpkin
1/3 bag of semisweet mini chocolate chips


  • Instructions
  • Preheat oven to 375 degrees.

    Combine flour, cinnamon, baking soda, baking powder, salt.

    Cream together, sugar and butter, then gradually add and beat in maple syrup, vanilla, and pumpkin puree. Add and beat in flour mix. Add chocolate chips.

    Drop onto baking sheet (press down to flatten the ball of dough a little each time) and bake 10 minutes.

    Snickerdoodle Blondies

    These are crazy good! I like that they are soft and chewy, even the next day. I forgot to add the vanilla, but they still turned out really well. I used dark brown sugar and I think it made them even better. I will definitely make them again - so easy!

    Chicken with Mushrooms and Zucchini

    This recipe was pretty quick and easy. I like that it includes ingredients I already had in the house. I think it needed more soy sauce, but other than that - it was good (and healthy).

    Grilled Honey Chicken and Veggie Kebabs

    I like anything that can be made on the grill! These were so easy and yummy. I loved them because they were healthy and made great leftovers.

     This was pretty good. It is more like a soup than a chili, but when I added avocado, sour cream, and cheese - it was really yummy. Paul liked it the next day for lunch too.
