Crispy Taco Cups

1 lb ground turkey/beef
1 onion (or sub. for a few dashes of onion powder)
1 can Rotel
6 large tortillas
Mexican cheese
melted butter

Taco Seasoning:
  • 2 teaspoons Chili Powder
  • 1-1/2 teaspoon Ground Cumin
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Crushed Red Pepper
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 1/4 teaspoon Dried Oregano
  • 1/4 teaspoon Black Pepper
Cook ground turkey with onion powder. Add taco seasoning once it is browned and drained; set aside.

Cut 6 flour tortillas to make big squares, then quarter into 4 smaller squares. Place 1 square in greased muffin tin, add small spoonful of meat, sprinkle cheese and repeat for 2nd layer. 

Spread melted butter over exposed tortillas on top layer. Cook at 350 until crispy and golden.

Homemade Sloppy Joes

Ingredients:

  • 1 pound lean ground beef
  • 1/4 cup diced yellow or sweet onion
  • 3/4 cup ketchup
  • 2 teaspoons prepared yellow mustard
  • 1/2 teaspoon garlic powder
  • 1 tablespoon light brown sugar
  • 1/4 cup water
  • salt and pepper to taste

Directions:

  1. In a large skillet over medium heat, cook beef and onion stirring occasionally, until beef is brown; drain.
  2. In a medium bowl, whisk together remaining ingredients.
  3. Add whisked ingredients to the browned beef and stir until thoroughly combined. Bring mixture to a simmer.
  4. Reduce heat to low and continue cooking for about 15 minutes, stirring occasionally.

Chocolate Avocado Cookies

This recipe is egg, nut, gluten, and oil free! If you use non-dairy chocolate chips then it would be vegan.

We used real sugar because we didn't have coconut sugar on hand. I used decaf coffee in place of the bourbon. I didn't add the instant coffee but I did add cinnamon.

Totally delicious. They're serious about waiting at least 15 min. before trying to eat them. 

Ben is obsessed with these.
