Low-Carb Brownie

I made it in a muffin tin and it worked. I also used coconut milk instead of almond milk. It took about 18 min. for it to cook through. Not exactly like a real brownie, but it did satisfy my chocolate craving. The consistency is like flour-less chocolate cake and it has a subtle chocolate and coconut flavor. I'm a fan... I think.

Picture Ingredients:
  • 1/4c. heavy cream
  • 1/2c. almond milk, unsweetened
  • 1/2c. almond flour
  • 1/4c. coconut flour
  • 2Tsp baking powder
  • 2 eggs
  • 2Tbsp butter, softened
  • 1/2c. sweetener, powder
  • 1/4c. cocoa powder, unsweetened
  • Pinch of salt
  • 2Tbsp coconut oil
  • 1Tbsp vanilla


Preheat the oven to 350F and blend the dry ingredients and mix in the wet. Divide the batter into 5 ramekins and bake for 15-20 minutes depending on your oven.

Sausage and Cauliflower Bake

OMG this is so good...

Steam a head of cauliflower.

Cook mild, ground breakfast sausage.

Break up cauliflower and mix with 1 package of cream cheese in mixer. Stir in cooked sausage. Spread half of the mixture into a square baking dish. Layer in swiss cheese slices. Add the rest of the mixture and top with more swiss cheese.

Bake at 350 until bubbly and heated through.

Bacon Wrapped Meatloaf (Paleo)

Preheat oven to 400 degrees. Lay bacon on a cookie sheet, overlapping slightly.
In a large bowl, combine all remaining ingredients. On a piece of parchment paper, shape the beef mixture into a loaf approximately 14\” long (or long enough to be the same length as the bacon all laid out). Carefully turn the loaf, centered, onto the bacon. Fold the ends of the bacon over the loaf and roll the entire thing over so that the bacon ends are down.
Cook for 60-70 minutes, or until cooked through. Let it sit for 5 minutes before cutting.

Ingredients

  • 1 pound bacon
  • 2 pounds ground beef
  • 1/2 onion, finely chopped
  • 2 teaspoons minced garlic
  • 1 egg
  • 3 heaping tablespoons tomato paste
  • 1/2 cup almond meal
  • 2 teaspoons oregano, 1 teaspoon salt
  • 1/2 teaspoon rosemary, 1/2 teaspoon thyme
  • 1/4 teaspoon black pepper; pinch red pepper flakes; pinch nutmeg

French Onion Pork "Picnic" Roast (Crock Pot)

2-3 lb pork picnic roast (I got mine from a local farmer at the farmer's market)
Mix 1 packet of onion soup mix with some 2 cups of water - pour over the top. Cook in crock pot on low for 7 hours or until done.

Simple Meatloaf (Primal/Paleo)

Simple meatloaf
• Serves 4
INGREDIENTS
• 1 onion, diced;
• 2 lb ground beef;
• 1 cup almond meal;
• 2 eggs;
• 1 can (6-8 oz) tomato paste;
• 1 tbsp minced garlic;
• 2 tbsp dried basil
• 1 tsp marjoram;
• Cooking fat;
• Sea salt and freshly ground black pepper
to taste;
PREPARATION
1 Preheat your oven to 350 F.
2 In a bowl, mix all the ingredients together except
the cooking fat.
3 Grease a loaf sized glass baking dish and place
the meat mixture in it to form a loaf.
4 Cover the top of the loaf with melted cooking
fat.
5 Bake in the oven for about 1 hour, until cooked
through and until the meat is no longer pink in
the middle.

Fresh Herb Meatballs

Fresh herb meatballs
• Serves 4
Serve these with a marinara or spaghetti sauce and over spaghetti squash or zucchini noodles if desired.
INGREDIENTS
• 1 lb ground beef;
• 1 lb ground pork;
• ½ onion, minced;
• ½ cup fresh basil, finely minced;
• ½ cup fresh parsley, finely minced;
• 1 cup spinach, finely minced;
• 4 eggs;
• ½ cup almond meal;
• 1 tbsp dried oregano;
• 4 cloves garlic, minced;
• Sea salt and freshly ground black pepper
to taste;
PREPARATION
1 Preheat your oven to 350 F.
2 Combine all the ingredients in a bowl and mix
well with your hands to combine. You can use a
food processor to reduce the basil, parsley and
spinach to a finer mixture before adding it to the
ground meat. Season the mixture to taste with
sea salt and freshly ground black pepper.
3 Make small balls the size of a golf ball and place
them apart on a baking sheet, then place them
in the preheated oven to cook for about 25 minutes,
until well cooked.

Sweet Potato Fries

Sweet potato fries
• Serves 5
INGREDIENTS
• 2 lbs sweet potatoes cut into large wedges.
• 1/4 cup cooking fat.
• 2-3 teaspoons or your favorite fresh or
dried herbs (thyme and rosemary are
great);
• Sea salt and freshly ground black pepper
to taste;
PREPARATION
1 Preheat your oven to 425 F. In a bowl, coat
evenly the sweet potato wedges with the cooking
fat and the herbs.
2 Season to taste with sea salt and freshly ground
black pepper.
3 Place the wedges on a baking tray in a single
layer so they cook evenly.
4 Roast for about 20 minutes.

Roasted Chicken (Wrapped in Bacon with Leaks)

Roasted chicken breasts wrapped in bacon with
leeks

This is a nice recipe with very little involvement for a quick dinner fix that still looks fancy. Use a snug-fitting
baking dish for best results. In this recipe, the leeks blend very well with the chicken and bacon.
INGREDIENTS
• 2 large chicken breasts, skin-on;
• 2 large leeks, sliced into ¼ inch slices;
• Olive oil;
• A few sprigs of fresh thyme;
• Cooking fat;
• 1/3 cup water
• 14 slices bacon;
• Sea salt and freshly ground black pepper
to taste;
PREPARATION
1 Preheat your oven to 400 F.
2 In a bowl, place the chicken breasts, the leek slices,
a bunch of picked thyme leaves, a few knobs
of cooking fat, a splash olive oil and season with
salt and pepper. Mix everything together well.
3 Line the bottom of a baking dish with a sheet of
aluminium paper that’s a bit larger than the dish,
to get some loose ends.
4 Place the leek mixture on the bottom of the dish
and place the breasts on top.
5 Wrap each chicken breast in 7 slices of bacon,
pour some more olive oil and knobs of cooking
fat here and there and place a few whole thyme
sprigs on top. Add the water.
6 Close up the loose ends of the aluminium paper
over the uncovered leeks so they don’t burn.
7 Cook in the middle of the preheated oven for
about 30 minutes, until the chicken is wellcooked

Shepherd's Pie (Primal/Paleo)

Shepherd’s pie
• Serves 4
In this version of the Shepherd’s pie, cauliflower is used instead of the potatoes for the mash. You can also
use sweet potatoes. This is the perfect comfort food and it’s also perfectly Paleo and healthy. All the ingredients
in this recipe are pretty cheap so it also makes for an inexpensive meal.
INGREDIENTS
• 1 large head cauliflower, cut into small
florets;
• 7 tbsp cooking fat;
• 1 medium onion, roughly chopped;
• 1 cup carrots, diced;
• 1 lb ground beef;
• 1/2 cup + 3 tbsp beef stock;
• 1 tbsp chopped fresh thyme or 1 tsp
dried;
• 1 tbsp chopped fresh rosemary or 1 tsp
dried;
• Sea salt and freshly ground black pepper
to taste;
• Paprika to garnish;
PREPARATION
1 Preheat your oven to 400 F.
2 Boil the cauliflower in a pot of salted water until
just tender.
3 Drain and mash with 2 tbsp of the cooking fat
and 3 tablespoons of the stock using a potato
masher. Use more of less stock to control the
consistency of the mash. Season to taste with
salt and pepper.
4 Heat 3 tablespoons of the cooking fat in a pan
over a medium-low heat and sauté the onions
until soft, about 5 minutes.
5 Add the ground meat and cook for another 5
minutes. Add the diced carrots and cook yet
again for 5 minutes.
6 Pour in the stock, season again with salt and
pepper and simmer, uncovered, for about 5
minutes.
7 Spread the cooked meat in a 9-inch pan and
spread the cauliflower mash on top.
8 Add the rest of the cooking fat on top of the
mash scattered around and bake in the preheated
oven for 30 minutes.
9 Remove from oven and garnish with paprika.
This Shepherd’s pie is excellent with homemade
ketchup.
