Chicken Tortilla Soup (Crock Pot) WW

 Yet to try this:

Put in crock pot - 2-4 chicken breasts, one can corn undrained, one can black beans drained, one can Rotel tomatoes with cilantro and lime, 2 cans chicken broth. Low all day. Take chicken out, shred and put back in pot. Soup is done! Top with whatever you want: sour cream, tortilla chips, cheese, lime juice, etc. 

WW Plus Points: 4 per serving (FOR REAL!)

Easy Peasy Cheeseburger Pie




Easy Peasy Cheeseburger Pie:

In skillet, Brown 1 lb ground beef (and saute 1 medium onion, if desired)
Spread into a pie plate (or a small casserole dish)
Top with 1 cup shredded cheddar cheese
In separate bowl, combine 2 eggs, 1/2 cup pancake mix, and 1 cup milk. spread into pie plate. 
Bake, uncovered, at 400· for about 25 minutes...

Hasselback Potatoes

These were really good, but I think they could have been cooked for another 10-15 minutes. I also added cheese to them when they came out so it was all melty.

Marinated Steak

I made this quick marinade and I let it marinate for 2 days in the fridge - because we had a change of dinner plans, but it worked out. Yummy!

INGREDIENTS:
1 cup soy sauce
1/2 cup brown sugar
1/2 cup apple cider vinegar
1/2 cup pineapple juice
3 garlic cloves crushed or finely minced
DIRECTIONS:
Combine all ingredients thoroughly and use as marinade. If marinating steaks, I marinade the meat overnight (about 12-14 hours) before grilling.

Oven directions:
Put marinated steaks on a broiler pan so the drippings drain. Put it under the broiler for 10-15 minutes depending on thickness of the steak and how well-done you like your steak. I put ours in for 13 minutes, but they were pretty thin and they ended up being well done.

Un-Sloppy Joes

I saw this on a Pilsbury commercial and figured I would give it a try.

UPDATE: These turned out really great. The recipe was simple, but actually folding the dough over the sloppy joe mixture was a little tricky. Next time I will roll each biscuit out a little thinner so it's easier. Make sure you don't overstuff these! However, even if they look like a mess before you put them in the oven, they will turn out looking really good.

*I added chopped onion, I used ground turkey and sharp cheddar.

Crock Pot Baked Potatoes

Crock Pot Baked Potatoes - SO EASY!

BBQ Chili with Corn WW

Ingredients:
1 lb lean ground beef
1 large onion, chopped
1 can (22 oz) southern pit barbecue grilling beans, undrained
1 can (14.5 oz) fire roasted diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 box frozen corn
1 Tbsp chili powder (or more to taste)
1 tsp ground cumin (or more to taste)
1/2 cup shredded cheddar cheese
2 cups corn chips

In heavy 3-quart saucepan, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.


Stir in remaining ingredients except cheese and corn chips. Heat to boiling; reduce heat. 
Simmer uncovered 5 to 10 minutes, stirring occasionally, until corn is tender. 

Top individual servings with cheese and corn chips.

Light Chicken "Fried" Chicken

I saw Paula Deen's son make this lighter version of her Chicken Fried Chicken on his show "Not My Mama's Meals". I can't wait to try it!

UPDATE: Okay, I started to make this and I ended up doing it my way. I did the flour mix and the buttermilk, but I also used Panko breadcrumbs because the boys like it crispy. I also used chicken tenderloins so they were much smaller pieces and therefore, they didn't need the step in the oven. Here's what I did:

1. Dredge in flour mix.
2. Dredge in lowfat buttermilk.
3. Cover in panko.
4. Pan fry in a mix of olive oil and peanut oil. (I didn't use that much oil, I was just trying to use up the rest of the peanut oil I had on hand.)

Next time: Add salt and pepper right after the chicken comes out of the pan.

Baked Ravioli

Easy weeknight meal. I added basil. It was like homemade Chef Boyarde - VERY kid-friendly, but I found it to be a little too bland. Next time I will experiment and add ground Italian sausage to make it more like a bakes casserole.

BBQ Chicken Braid

This was AWESOME! I liked it because it took 5 minutes to put together.

My favorite trick: Throw a whole bag of frozen chicken breasts or frozen chicken tenderloins in the crock pot and cook it on low for 4-6 hours, or until done. I bet 8 hours would be fine too. When it's done, shred it with two forks. You end up with enough shredded chicken for several meals!

This is Tanner's favorite meal. I don't make it that often, but it's really not too difficult and it tastes as good as Chinese takeout. Just make it with white rice and green beans and you're all set. It always turns out really well but the leftovers are a little funky - just like leftover Chinese restaurant sesame chicken.
