Light Chicken "Fried" Chicken

I saw Paula Deen's son make this lighter version of her Chicken Fried Chicken on his show "Not My Mama's Meals". I can't wait to try it!

UPDATE: Okay, I started to make this and I ended up doing it my way. I did the flour mix and the buttermilk, but I also used Panko breadcrumbs because the boys like it crispy. I also used chicken tenderloins so they were much smaller pieces and therefore, they didn't need the step in the oven. Here's what I did:

1. Dredge in flour mix.
2. Dredge in lowfat buttermilk.
3. Cover in panko.
4. Pan fry in a mix of olive oil and peanut oil. (I didn't use that much oil, I was just trying to use up the rest of the peanut oil I had on hand.)

Next time: Add salt and pepper right after the chicken comes out of the pan.
